Time required for kimchi to ripen depends on the salt concentration.
Not so salty kimchi does not take long to ripen, whereas salty kimchi takes long to ripen.
Even if fermentation mode has ended, the ripened taste may not appear immediately as each batch of kimchi is different.
However, as time passes, your kimchi will have ripened faster than compared to using storage mode.
